- 3 avocados
- Fresh lemon juice
- Surimi sticks (imitation crab meat)
- Wasabi (if you like it spicy!)
- Soy sauce
- Pickled ginger
- Toasted sesame seeds

Directions:

1. Prep the Rice: Mix the vinegar, sugar, and salt in a small pot on the stove. Heat it up until the sugar dissolves, then set it aside to cool. Soak the rice for 30 minutes, then drain it and put it in a pot with 4 cups of water. Let it boil, then turn down the heat and let it simmer with the lid on for 15 minutes. Let it rest for another 15 minutes, then fluff it up with a spatula. Finally, mix in the vinegar mixture you made earlier.

2. Prep the Sushi Filling: Wash the cucumber, peel it, and take out the seeds. Cut the avocados in half, remove the pit, and slice them into thin strips. Squeeze some lemon juice over the avocado so it doesn't turn brown. Cut the surimi sticks in half lengthwise too.
