Ingredients
- 4 large potatoes, already peeled and cut into four pieces (quartered)
- 2 medium carrots, already peeled and sliced
- 2 celery stalks, cut into small cubes (diced)
- 1 medium onion, cut into four pieces (quartered)
- 1 (14-ounce) can of vegetable or chicken broth (this is liquid for cooking)
- 3 tablespoons of butter
- 3 tablespoons of all-purpose flour
- 3 cups of milk, divided (use some now, some later)
- 1 and 1/2 cups of shredded sharp cheddar cheese (cut into thin pieces)
- 1 tablespoon of dill weed (a green herb)
- 1 cup of sour cream (a creamy ingredient)
- 1/4 tablespoon of chili powder (a little spice)
- Salt and pepper (for taste)
- Parsley chopped (for decorating on top)

Cooking the Vegetables:
1. Get a large soup pot and put it over medium-high heat on the stove. Add the quartered potatoes, sliced carrots, diced celery, quartered onion, and the vegetable or chicken broth to the pot.
2. Put a lid on the pot and let it bubble gently (simmer) for 15 to 20 minutes. Cook until the vegetables feel soft when you poke them with a fork.
3. Take the soup pot off the heat.
Making the Cream Sauce:
4. While the vegetables are cooking, get a medium saucepan and put it over medium-high heat. Melt the butter in the saucepan.
5. Add the flour to the melted butter, stirring all the time until the mixture is smooth and bubbly.
6. Add the 3 cups of milk (the first part of it) to the saucepan. Bring it to a boil, stirring all the time until it becomes thick.
7. Take the saucepan off the heat. Add the shredded cheddar cheese and the dill weed. Stir until all the cheese has melted. Set this cheese sauce aside.
Blending the Vegetables and Combining the Soup:
8. Get a food processor or blender. Carefully pour some of the cooked vegetable mixture from the soup pot (step 3) into the blender, adding some of the remaining milk (the second part of the 3 cups of milk from the ingredients list). Blend it in small batches until smooth.
9. Pour the blended potato mixture back into the large soup pot.
10. Add the cheese sauce (that you made in steps 4-7) to the soup pot.
11. Add the sour cream, the rest of the remaining milk, salt, pepper, and the chili powder to the pot.
12. Stir everything until it is mixed together very well.
Heating and Serving:
13. Put the soup pot back over medium heat on the stove.
14. Heat the soup until it is warm all the way through. Don't let it boil again.
15. Take the soup pot off the heat.
16. Serve the warm soup in soup bowls! Garnish each bowl with fresh chopped parsley on top.
