- 2 1/2 cups raisins
- 2 1/2 cups golden raisins
- 4 cups bread crumbs
- 2 1/2 cups brown sugar
- 1 cup lard
- 1 tablespoon candied peels
- 5/8 cup chopped Maraschino cherries
- 1 cup chopped almonds
- Water
- Grated rind of 1 lemon
- Grated rind of 1 orange
- 1 carrot, grated
- 1 apple, diced
- 1 tablespoon flour
- 1 teaspoon pumpkin pie spice
- 6 eggs
- 1 1/4 cups Guinness (a special kind of dark beer - don't worry, it's for grown-ups!)
- A pinch of salt
- Butter (for greasing the bowl)
- Holly sprig and fruit (for decoration)

Instructions

1. Make the Custard: In a small pot, mix the milk, cream, and vanilla bean. Heat it slowly until it starts to bubble, then turn off the heat. In a bowl, whisk the egg yolks and sugar until they turn light yellow. Slowly pour the warm milk mixture into the eggs while whisking. Put the mixture back in the pot and cook on medium heat until it gets thick, stirring all the time so it doesn't burn. Once it's thick, strain it through a sieve.

2. Mix the Pudding Ingredients: In a big bowl, combine all the pudding ingredients: raisins, golden raisins, currants, bread crumbs, lard, brown sugar, candied peels, orange and lemon rind, grated carrot, chopped cherries, chopped almonds, pumpkin pie spice, flour, diced apple, and a pinch of salt. Mix it all up well!

3. Add the Wet Ingredients: In a separate bowl, beat the eggs lightly with a fork. Then, add the beaten eggs and Guinness to the dry mixture and mix everything together with your hands or a spoon.

4. Prepare the Bowl: Grease a heatproof bowl with butter. Press the pudding mixture into the bowl.

5. Cover and Steam: Cover the bowl with baking paper and then tin foil. Tie a string around the bowl to keep everything in place. Put the bowl in a saucepan that's half-filled with water. Make sure the bowl doesn't touch the bottom of the pan!

6. Cook the Pudding: Turn the heat up high and bring the water to a boil. Then, turn the heat down low and let the pudding cook for 4-5 hours. Keep checking the water level to make sure it doesn't boil away.
