Ingredients:
- 8 flat dough discs (these are the wrappers)
- Sauerkraut (for serving)
- Water
- Pinch of salt (for cooking water)
- Sour cream (optional, for serving)
- Potato & Cheese Filling:
- 2 cups of mashed potatoes
- 1 pound (lb.) of cheese of choice, cut into cubes
- Salt, onion salt, and white pepper (to make it taste good!)
Meat Filling:
- 1 and 1/4 pounds (lbs.) of lean ground beef
- 2 eggs, lightly beaten (mixed up gently)
- 2 tablespoons (Tbsp) of vegetable oil (for cooking)
- 1 onion, chopped (cut into little pieces)
- 2 cloves of garlic, chopped (cut into little pieces)
- 1/2 teaspoon (tsp) of salt
- 1 teaspoon (tsp) of pepper
- Pinch of ground cumin (a little bit of this spice)
- Pinch of ground allspice (a little bit of this spice)
Directions:
Let's cook some yummy pierogi with two different fillings!
Making the Meat Filling:
1. Get a large bowl. Put the chopped onion, chopped garlic, salt, pepper, ground cumin, ground allspice, the lightly beaten eggs, and the ground beef into the bowl. Mix all these ingredients together very well using your hands.
2. Heat the vegetable oil in a large pan on the stove. Put the meat mixture into the hot pan and cook (sauté) it for 3 to 5 minutes, stirring and breaking up the meat as you cook, until the meat is brown.
3. Transfer the cooked meat mixture to a bowl and set it aside.
Making the Potato and Cheese Filling:
4. Get another bowl. Put the mashed potatoes and the cubed cheese into the bowl. Add salt, onion salt, and white pepper to make it taste good. Mix everything together well.
Assembling the Pierogi:
5. Take a flat dough disc. Place a spoonful of the potato and cheese filling right in the center of the disc. Wet the edges of the dough disc using a little water. Take another flat dough disc and place it on top, pressing the edges together with a fork to seal tightly.
6. Repeat step 5 with the rest of the flat dough discs, using the meat filling this time.
Cooking and Serving the Pierogi:
7. Get a large pot and fill it with water. Add a little pinch of salt. Put the pot on the stove and bring the water to a boil.
8. Gently add the assembled Pierogi to the boiling water one by one. Cook them until they float to the top (3 to 5 minutes).
9. Use a slotted spoon to take the cooked Pierogi out of the water.
10. Serve your yummy Pierogi! You can serve them with sauerkraut and sour cream if you like!
