Ingredients

Red Bean Filling:
- 1 cup of red adzuki beans
- 3 cups of water
- 3/4 cup of brown sugar
- 1/4 teaspoon (tsp) of salt
- 1 teaspoon (tsp) of vanilla extract
- 2 and 1/2 tablespoons (Tbsp) of rice syrup
- 6 small strawberries, destemmed (stems removed)

Rice Cake:
- 1 cup of sweet rice flour (Mochiko powder)
- 1/4 teaspoon (tsp) of salt
- 1 tablespoon (Tbsp) of sugar
- 3/4 cup of water
- 2 drops of pink food coloring
- 2 drops of green food coloring
- Starch powder (for dusting)
- Chopped peanuts (to garnish)
- Green tea (to serve)

Making the Red Bean Filling:

1. Place 3 cups of water and the red adzuki beans in a large stockpot. Bring it to a boil over high heat, then cover the pot and let it boil for 10 minutes.

2. Lower the heat and let it bubble gently (simmer) for about 1 and 1/2 hours or until the beans are very soft.

3. Once the beans are soft, take the pot off the heat. Mash the beans in a food processor until they are smooth.

4. Return the mashed red beans to the stockpot. Over low heat, add the brown sugar, salt, vanilla, and rice syrup. Stir well.

5. Cook the red bean filling, stirring now and then, until the sugar is dissolved and the mixture looks a little bit shiny. Transfer the cooked mixture to a bowl and let it cool completely.

Preparing Strawberry and Red Bean Balls:

6. Take a small spoonful of the cooled red bean paste and press it into a thin disk. Set this aside on a dish.

7. Place one destemmed strawberry in the center of the red bean disk. Gently form the paste around the berry to cover it completely and make a ball shape.

8. Repeat this process for the remaining red bean paste and strawberries, and set the finished balls aside.

Making the Rice Cake Dough:

9. Preheat your oven to 325°F. Divide the sweet rice flour, 1/4 tsp salt, 1 Tbsp sugar, and 3/4 cup water evenly into 3 medium bowls.

10. Drop pink food coloring into one bowl of dough mixture and green food coloring into another. Mix all three bowls (the plain one, the pink one, and the green one) very well.

11. Cover each dough bowl tightly with aluminum foil and place them onto a baking sheet. Put the baking sheet in the preheated oven and bake for 6 minutes.

12. Remove the dough bowls from the oven and carefully remove the foil. Stir each dough very fast (vigorously) about 100 times until it becomes chewy.

13. Spread starch powder on a cutting board. Take one bowl of dough and form it into a rectangle shape on the cutting board. Cut this dough rectangle in half. Repeat this for the other two dough bowls.

Assembling Rice Cakes:

14. Flatten one dough half into a round circle, about 2 and 1/2 inches wide.

15. Place one red bean-strawberry ball (that you made earlier) right in the center of the dough circle.

16. Carefully form the dough around the red bean ball and seal it completely by pinching the top edges together with your fingers. (Use starch powder on your hands if the dough starts to stick.)

17. Repeat this process to form the remaining rice cakes. Place each finished rice cake into a cupcake liner.

Serving:

18. Arrange your sweet rice cakes on a serving plate. Garnish them with chopped peanuts. Serve them with green tea.
