Ingredients:
- 1/2 cup of superfine sugar
- 4 egg yolks
- 1/2 pint of milk
- 1/2 pint of heavy cream
- 2 vanilla beans, split and scraped (for flavor)
- Nuts (for garnish)
- Chocolate syrup (for garnish)
Preparing Base Mixture:
1. Gently heat milk in a pan, but don't let it boil; you don't want to scald the milk.
2. In a large bowl, mix sugar and egg yolks very well.
3. Slowly mix the heated milk into the egg mixture. Transfer this mix back to the pan, stirring now and then until it gets thick. (Be careful not to pour the egg mixture into the hot milk, or your eggs will scramble!)
4. Pour the thickened mix back into the large bowl and set it aside to cool.
Churning Ice Cream:
5. Whisk in the heavy cream and the scraped vanilla from the beans.
6. Pour the entire mix into an ice cream maker and churn for 20 minutes.
Freezing & Serving:
7. Move the ice cream to a container and put it in the freezer for 3 hours.
8. After it has set (become firm), scoop the ice cream into a serving bowl. Top it with nuts and chocolate syrup!
