Ingredients
- 2 and 1/2 teaspoons (tsp) of yeast
- 1/4 cup of warm water
- 1/4 cup of sugar (divided: use some now, some later)
- 1 and 1/2 cups of flour
- 1 cup of whole-wheat pastry flour
- 2 teaspoons (tsp) of lemon zest (grated lemon peel)
- 1/4 teaspoon (tsp) of salt
- 2/3 cup of low-fat milk
- 1/4 cup of unsalted butter, melted
- 2 eggs
- 1 beaten egg (for brushing)
- Raisins (for bunny eyes)
- Sliced almonds (for bunny teeth)
- Pastry bag with frosting (for ears and whiskers)
- Ranch dressing (or sauce of choice) to serve
Preparing the Dough:
1. In a medium bowl, mix together the warm water, yeast, and 2 tablespoons of sugar. Set this aside for 5 minutes until the yeast is absorbed (it should look bubbly).
2. In a large bowl, mix the rest of the sugar, both types of flour (plain and whole-wheat pastry flour), lemon zest, and salt. Set this dry mix aside.
3. In another medium bowl, mix the milk, melted butter, and the 2 eggs. Add this wet mixture into the large bowl with the flour mixture and blend until well mixed.
4. Next, add the yeast mixture (from step 1) to the dough. Knead the dough gently until it feels stretchy and a little bit sticky (about 5 minutes). Then, shape the dough into a ball.
5. Cover the dough ball with plastic wrap and set it aside in a warm place until it has become twice as big (doubled in size), which takes about an hour.
Shaping the Bunny Bread:
6. Line a baking sheet with baking paper. Remove the plastic wrap from the dough ball and cut the dough into 11 pieces. These pieces will be for the head, body, 2 ears, 2 front paws, 2 back legs, the nose, and 2 cheeks.
7. Form one of the larger dough pieces into the head shape and set it on your prepared baking sheet.
8. Take another large piece of dough and roll it into an egg shape to form the body. Attach this body piece to the head on the baking sheet.
9. Take 2 medium pieces of dough and shape them into small front bunny paws. Attach these to the bunny's body, under the bunny's head.
10. Create bunny back legs with 2 more medium pieces of dough and attach them to the body. Roll 2 small pieces of dough to form ears and attach them to the head.
11. Roll 1 of the remaining small pieces of dough into a marble-sized ball for the nose and the other 2 into walnut-sized balls for the cheeks. Attach these to the bunny head.
12. Once the bunny shape is fully formed, cover the baking sheet with plastic wrap again. Set it aside to rise in a warm place for 45 minutes.
Baking and Initial Decoration:
13. Preheat your oven to 350°F. Remove the plastic wrap from the baking sheet.
14. Brush the beaten egg all over the bunny bread (this helps it get a golden color).
15. Carefully place raisins to make the bunny's eyes.
16. Put the baking sheet in the preheated oven and bake for 25 minutes, or until the bread turns golden in color. Remove the bread from the oven and let it cool completely.
Final Decoration and Serving:
17. Use frosting from a pastry bag to decorate the bunny's ears and create whiskers on its face.
18. Place 2 almond slices next to each other just below the bunny's nose to create its teeth.
19. Put the bunny bread on a serving tray with vegetables.
20. Cut a round shape out of the bunny's belly. Line this hole with lettuce leaves and then pour in ranch dipping sauce. Your bunny bread is now ready to serve!
