Ingredients
- 2 cups of coconut milk
- 1 cup of coconut cream
- 1 cup of heavy cream

- 6 tablespoons of cold water

For Strawberry Sauce:
- 3/4 of a pound of strawberries, cut in half
- 2 tablespoons of lemon juice
- 2 tablespoons of sugar
- 1/2 cup of water
- 2 teaspoons of cornstarch
- 3 tablespoons of water (for mixing with cornstarch)

For Garnish:
- 1 kiwi, cut into small cubes
- 1 mango, cut into small cubes
- A little sprig of mint (a green leaf)
- 2 blackberries

Directions:
Let's get cooking! We'll start by making the strawberry sauce.

Making the Strawberry Sauce:

1. First, warm up the oven to 350°F.

2. Lightly put some oil on a baking sheet.

3. Place the strawberry halves on the baking sheet and then put the baking sheet into the warm oven. Bake them for about 20 minutes.

4. Carefully take the baked strawberries out of the oven. Put the baked strawberries into a food processor (a kitchen helper tool).

5. Gently mix them in the food processor until they are a light puree (like a smooth mush).

6. Get a saucepan and put it over medium heat on the stove.

7. Add the strawberry puree, lemon juice, sugar, and the 1/2 cup of water into the saucepan. Stir it all together.

8. Cook the mixture until it starts to bubble gently (simmer).

9. In a separate small bowl, mix the cornstarch with the 3 tablespoons of water until it's smooth.

10. Pour the cornstarch and water mixture into the saucepan with the strawberry sauce.

11. Stir the sauce constantly until it becomes thick.

12. Take the strawberry sauce off the heat and let it cool down.

Making the Panna Cotta Mixture:

1. Find a small bowl. Sprinkle the powdered gelatin over the 6 tablespoons of cold water. Let it sit there for 5 to 10 minutes. This is called letting the gelatin "bloom."

2. Get another saucepan and put it over medium heat on the stove.

3. Add the coconut milk, coconut cream, heavy cream, caster sugar, and vanilla extract into this saucepan.

4. Stir it all together until the sugar disappears (dissolves).

5. Heat the mixture just until it is about to start boiling, but don't let it boil fully.

6. Take this saucepan off the heat and let the mixture sit for 20 minutes.

7. Add the gelatin mixture (the bloomed gelatin and water) to the warm panna cotta mixture.

8. Whisk it until the gelatin is completely mixed in and you can't see any little pieces anymore.

Putting it All Together:

1. Pour the panna cotta mixture into small ramekin bowls.

2. Carefully place the bowls in the fridge and let them chill for at least 3 hours. This is how the panna cotta gets firm!

3. When the panna cotta is ready, take it out of the fridge.

4. Gently run a knife around the inside edge of each ramekin bowl.

5. Turn the bowl upside down onto a serving plate so the panna cotta comes out!

6. Pour some of the cooled strawberry sauce onto the serving plate next to or on the panna cotta.

7. Garnish your panna cotta by decorating it with diced kiwi, diced mango, mint sprig, and blackberries.
