Ingredients:
- 1 and 1/2 cups of Arborio rice (this is a special kind of rice for Risotto)
- 2 medium onions, chopped
- 2/3 cup of peas (fresh or frozen)
- 8 slices of bacon, cut into small squares (diced, smoked is an option)
- 1/3 cup of grated Parmesan cheese (for mixing in)
- 1/4 cup of butter
- 2 garlic cloves, chopped
- 1/2 teaspoon of saffron (a spice that can make it yellow)
- 3 and 1/2 cups of vegetable stock (or chicken broth)
- 1 cup of white wine
- 3 tablespoons (Tbsp) of olive oil
- Salt and pepper (to taste)
- Grated Parmesan cheese (for decorating on top)

Here are the steps to make this dish!
Cooking Bacon and Onion:
1. Get a large frying pan and put it over medium heat on the stove. Add the diced bacon to the pan.
2. Fry the bacon for 8 to 10 minutes, stirring sometimes, until it starts to get crispy and turn brown.
3. Take the cooked bacon out of the pan (but leave the oil in the pan) and set it aside.
4. Add the chopped onion to the pan with the bacon oil. Fry the onion on a low heat for 10 minutes, stirring sometimes.
Cooking the Rice with Liquids:
5. Add the Arborio rice to the pan with the onion and cook it over medium heat for 2 minutes, stirring often.
6. Add the chopped saffron and the white wine to the pan. Stir and cook for another 10 minutes.
7. Add the vegetable stock to the pan. Stir often and cook for another few minutes until all the liquid has been soaked up and the rice is almost soft and ready.
Adding Final Ingredients and Finishing:
8. Finally, add the fried bacon (that you set aside), the peas, the chopped garlic, salt, and pepper to the pan. Cook for a few more minutes until the peas are cooked.
9. Then add the 1/3 cup of Parmesan cheese and the butter to the pan and stir everything together.
10. Take the pan off the heat and cover it with a lid. Let it sit like that for three minutes.
