Ingredients:
- 1 and 1/2 pounds (lbs) of beef rump steak
- 1 and 1/3 cups of cherry tomatoes, cut in half
- 1 cucumber, cut in half lengthwise
- 1 red onion, sliced into wedges
- 2 long red chilis, seeds removed and sliced into thin, long strips
- 1/3 cup of toasted peanuts, coarsely chopped
- Handful of mint leaves, shredded
- Handful of Thai basil leaves, shredded
- Small handful of cilantro leaves, shredded
- 4 Kaffir lime leaves, center veins removed and shredded
- Spicy peanut sauce (to serve)
Salad Dressing:
- 1 and 1/2 tablespoons (Tbsp) of lime juice
- 1 tablespoon (Tbsp) of dark palm sugar, crumbled
- 1 tablespoon (Tbsp) of fish sauce
- 2 teaspoons (tsp) of sesame oil
- 1 teaspoon (tsp) of soy sauce
- 2 teaspoons (tsp) of fresh ginger, grated
- 1 garlic clove, crushed
Making Salad Dressing:
1. In a bowl, combine the lime juice, palm sugar, fish sauce, sesame oil, soy sauce, grated ginger, and crushed garlic. Mix well.
2. Set aside half of the dressing. Cover the other half and place it in the fridge.
Marinating Beef:
3. Place the beef rump steak in a large bowl or ceramic dish. Drizzle it with the first half of the salad dressing, making sure to coat the steak completely to marinate it.
4. Cover the dish with foil and place it in the fridge for 2 hours, turning the steak occasionally.
Cooking Beef:
