Ingredients:
Pastry Dough:
- 1/2 cup of butter at room temperature
- 1 egg, lightly beaten
- 4-6 tablespoons (Tbsp) of cold water
- A pinch of salt
Caramel Apple Filling:
- 1 cup of unsalted butter
- 3/4 cup of sugar
- 2 tablespoons (Tbsp) of water
- 10 apples
Preparing Apples & Pastry Dough:
1. Peel, core, and quarter the apples.
2. In a large bowl, whisk together the flour, salt, butter, and beaten egg. Add a dash of water and mix well. Repeat adding water until a firm but rough dough forms.
3. oll the dough flat into a circular shape. Place the dough disc on a plate, cover with plastic wrap, and refrigerate for 1 hour.
Making Caramel Apple Filling:
4. In a saucepan, mix 1 cup of unsalted butter, 3/4 cup of sugar, and 2 Tbsp of water. Cook over medium heat, caramelizing the sugar until it turns golden brown. Immediately remove from heat.
5. Pour the caramelized sugar into the saucepan (if it's a separate pan for the tart). Arrange the apple quarters in circles on top of the caramel, placing them rounded side down. Fill any gaps with extra apple pieces so they form one solid mass.
6. Sprinkle sugar over the apples. Place the saucepan back on medium heat for 15 minutes, until the caramel starts bubbling through the apples.
Assembling & Baking:
7. Meanwhile, preheat your oven to 400°F. Remove the saucepan from the heat.
8. Place the chilled dough disc over the apples in the saucepan, folding the edges of the dough in slightly. Make one hole in the middle with a fork and add 3 more holes to release steam while baking.
9. Place the saucepan in the preheated oven and bake for 20 minutes or until the pastry is golden brown.
Resting & Flipping to Serve:
10. Remove the saucepan from the oven and let it rest for 15 minutes (this is important for easy flipping!).
11. Place a serving plate upside-down on top of the saucepan. Turn both the plate and pan over together quickly. Slowly remove the saucepan from the cake. Voilà! Your Tarte Tatin is ready to serve. You can eat it with cream, ice cream, or crème anglaise.
Mastering this French classic is a true baking triumph! You'll transform simple apples and pastry into a golden, gooey, upside-down delight. Get ready to impress everyone with your stunning and yummy creation!
